Mixed Up Weird Breakfast

I called it Mixed Up Breakfast.  

Ingredient :
1 egg
Some fresh salad- sliced
Mixed vege (carrot, peas, corn)
Chicken sausage
A few pealed prawn
Some garlic
Salt and white pepper

Cooking Method :
Heat the cooking oil, sauté garlic follow by chicken sausage, and prawn. Add in salt and white pepper, then put mixed vege. Finally when everything cooked, add in salad and just stir with the others and serve.
Easy!!!!

Breakfast : Cold Tuna Sandwich

It been a while I didn't ate sandwich so this morning i'm eagerly wakes up early and prepare my sandwich.

Ingredient : your own measurement
Canned tuna chunk in oil
Fresh salad
Cheese
Egg-boiled and cut it into pieces
2 slice of bread (any type)

Method:
Since it's a simple sandwich, I didn't add any mayonnaise or chili souse or tomato ketchup plus the tuna itself contain a little bit salt.
Arrange all the ingredient according to your taste. Wrap the sandwich with transparent food wrapping plastic and put it in fridge to make it cold a bit.
While for my hubby who is in diet program, I didn't serve with bread but use the salad to wrap everything.

Black Chicken Soup



It's 2nd  my hubby under a new dieting program. So he should have something that low carb and high protein. So I've cooked chicken soup with vegetable for him at it's called Black Chicken Soup as the chicken's skin is black color. I've  used this chicken because it's very suitable for herbal soups and low in fat. (The chicken is have white feather and black skin inside).

These are the ingredient :
1 whole black chicken (optional) -cut into small pieces
1 tablespoon fennel seed
1 tablespoon coriander seed
1 table spoon black cumin
1/2 tablespoon black pepper seed
1 inch ginger
6 glove of garlic
3 small onions (Spanish onions or other)
1 medium sized carrot
1 potato (it's for me, he's not allow to take carb)
Handful cabbage (option)
Salt


Method :
1. Finely ground fennel seed, coriander seed, black cumin, black pepper seed, ginger, garlic, onions. Make it as paste.
2. In the soup pot- put in the chicken, the spice paste, potato, salt and water. Then heat the pot. 
3. Let it boil until the chicken cooks. Put your carrot and cabbage in the last 10 minutes before you switch off the flame.
4. Serve.

Mince Chicken with Chili and Petai

I always have extra boneless chicken  in fridge so i've attempt to used it as mince chicken  as i don't have what to do with it.This is a very easy dish and does not take a lot ingredient and time. It's suitable as add up with plain rice porridge or rice as well.



Ingredient :
-Some boneless chicken ( steam and chop it into very small pieces)
-3 stalk of Petai
-15 dry chilies ground with little water and 4 pieces of garlic (makes it  paste)
-Cooking Oil
-Salt

Method :
-Put some cooking oil into the pan.
-Pour the chilies paste into the oil and stir it a while until all the oil absorbed by the paste.
-Add petai and saute for a while then finally put in the mince chicken.
-Mince chicken will blend with the chili paste and it should be dry dish.
-Ready to serve.

Pak Choi Stir Fry

A very simple vegetable stir fry that i always cook at home (or maybe it's super fast stir fry)
Ingredient
6 medium size pak choi  (cut it into 2 or 3 piece)
little salt
1 tsp oyster sauce
4 clove garlic

Method:
1. With little oil, fry the garlic then put in pak choi, salt and oyster sauce.
2. Stir for a while and it's ready. Goes well with rice.

Bamboo Sprout

This is actually rebung masak lemak in Malay, but since i donno how to name it in English so i just leave it like that. This is a traditional Malay food but i might forget some ingredient while cooking this because for me this taste already ok. If anyone notice, please let me know.

Ingredient :
250-350 gram bamboo sprout
10 chilies
1 red onion
1 tsp turmeric powder
some salt
150 gm chicken (with bones) (some people use fish also)
1/2  cup thick coconut milk and 2 cup of light coconut milk


1. Wash the bomboo sprout.
2. Pound together chilies, onion, salt and turmeric powder.
3. With little oil, cook the pounded paste until it have a nice smell.
4. Put in the chicken and bamboo sprout and let the chicken cook.
5.  Pour the light coconut milk and let it cook.
6. Finally pour the thick coconut milk and let it cook (but not to long as we don't want the coconut milk overcooked).

Spicy Fish Sambal

This spicy sambal is very easy to cook. I always do this sambal because it's very easy and fast to cook.


Ingredient :
10 chilies (cili api), 4 garlic and little salt  pounded together
1 tomato
1 red onion
2 fish (any fish)
1/2 cup water


Method :
1. Pound together chilies, garlic and little salt.
2. Marinate fish with some salt and tumeric and fry it nicely.
2. With little oil, fry the red onion for a while and put the pounded chilies and let it cook until it have a nice smell.
3. After that, pour the water and tomato and let it cook .
4. Finally, put the fish and mix it together a a few minutes and after that it ready to serve.

Cuttlefish Sambal

Continues from my previous entry regarding Petai, i enclose a very simple dish using petai.
(for 2 person)
5-7 medium size cuttlefish
6-12 dry chilies (wash & blended and make a watery paste)

1 red onion
2 stalk of petai (cut it into two pieces)
little salt
1/2 cube of chicken stock (optional)

Instruction :
1. With little oil, fry the onion for a while.
2. Pour the dry chilies paste and let it cook for a while.
3. Put the petai, cuttlefish, salt and chicken cube.
4. Put some water so that it won't be too thick.
5. If the cuttlefish cooked, then your can serve it ready. Goes well with rice.

Garam Masala Powder

6mm cinnnamon sticks, chopped into small pieces
30gm cardamoms, just the seed
3 tsps cloves
3 tsps black cumin
3 tsps black peppercorns
2 nugmegs
6 bay leaves

Method:
1. Dry roast all ingredients for about 2-3 minutes.
2. Cool thoroghtly before grinding in the coffee grinder till fine.
3. Store in an air-tight container.

Yoghurt Beetroot Pachadi

200gm beetroot, pelled and cut into narrow strips
1 1/2 tspc salt or more to taste
3 cups yoghurt
2 onions, cut into rings
2 red chilies, slices
2 springs coriander leaves, chopped

Method:
1. Steam beetroot strips till cooked
2. Put yoghurt and salt into a bowl and beat well
3. Add all toher ingredients and mix well
4. Serve chilled
